There's a lovely little restaurant on Ayre Square, great value. The Lonely Planet has it in there 100 best places to eat in the world. I always go in when I'm in Galway, absolutely top notch.

Go out to Aran Islands for a day, Corrib princess boat tour up the corrib, both reasonably priced.
Islands are lovely on a sunny day! You could drive out to clifden, leenane for fantastic scenery.
